A few weeks ago I went the Agrarian Kitchen for the macaron class. I was especially looking forward to this, as I have a few of my friends coming to the class with me. It was going to be a super-fun, sugar-filled day. The class was taken by Alistair Wise from Sweet Envy. You know those beautiful macarons sitting in the immaculate display in his shop? My last class at the Agrarian Kitchen was the Birds of a Feather. If you are squeamish, then I would advice skipping this post. However, if you want to find out how to harvest your own animals, then read on.
I want to focus on the process of how to dispatch these animals, because I that's what eating meat is all about. Do you like a roaring bonfire? I do. Lots. During the day, we worked with three different fires: hearth/fireplace cooking; the Alan Scott woodfire oven; and the bonfire in the garden. One thing that I hadn't appreciated about cooking with fire, is that there's an extra dimension to it, literally. You can cook over flames, coals, under ashes... Yes yes! I'm very lucky to be invited back by Severine for more photos of the Agrarian Kitchen. Being a little late with my mother's day present, I asked mum to come along. She always talks the truffle lunch we had there few years ago, so it was the perfect opportunity to lavish her with a class.

My mum loves cooking. No, I mean. loooooooooves cooking. When I was asked by Severine to take some photos for their Agrarian Experience class, I asked mum to join me for the day.
That's my mum making bread there! I think the photo says it all -- she was pretty happy :)
Oh oh oh. We've had a taste of fresh honey, right where it's made.

When the opportunity to go to the Agrarian Kitchen for the handmade pasta masterclass, I quickly asked for, and gratefully granted, a day off work. I was so excited to be invited back in the kitchen.
I think pasta is a bit underrated. Think aisle of bottled sauce; blandly cooked pasta; cafeteria-bain-marie pasta swim-a-thon. Bleh. I am truly the luckiest person in the world :) I was back in the Agrarian Kitchen last week to take photos and attend the Whole Hog class. It was taken by one of the best butcher in Hobart, Marcus Vermey, of Vermey's Quality Meats in Sandy Bay. What followed was two whole days of pork heaven, using everything from nose to tail, turning the hog into 13 dishes.

The short truffle season is upon us again. Blink and you will miss it. There's a buzz in the air, as everyone seeks out the precious 'black gold' for a special occasion treat, and truffle dishes pops up in restaurant menus.

I have a major crush on the kitchen at the Agrarian Kitchen, so when a spot became available for Pastry 101, I quickly snaffled it up within an hour of the news. I think Severine was shocked by how quickly I emailed! All of the classes are booked right up until October and this will be my last chance to do a class for the rest of the year.
